I remember having banana bread at a very young age - my mom used to make it for us a few times a month, & I often ask her to make a loaf every time I go home to visit.
Banana bread is a classic comfort food & I absolutely love how it fills the house with warmth & a delicious banana aroma. Banana Bread is magic.
Unfortunately, it can often be packed with sugar & butter. Fear no more...this recipe is naturally sweetened with honey & it's moistened with coconut oil instead of butter.
HEALTHY BANANA BREAD Yield: 1 loaf
Ingredients:
1/3 cup coconut oil, melted
1/2 cup honey (or pure maple syrup)
2 large eggs
2 large bananas, mashed
1/4 cup milk of choice (I used oat)
1 teaspoon baking soda
1 teaspoon pure vanilla extract
pinch Himalayan sea salt
1/2 teaspoon cinnamon + more to sprinkle on top
1 3/4 cups whole wheat pastry flour
Optional mix-ins: chopped walnuts, pecans, chocolate chips, raisins
Instructions: 1. Preheat oven to 325F
2. In a large bowl, whisk honey & oil together.
3. Add eggs, mix well. Whisk in bananas & milk.
4. Add baking soda, vanilla, salt, cinnamon. Whisk together. Lastly, stir in flour slowly. Mix until just combined - don't over-mix, some lumps are okay. If adding mix-ins, fold them in now.
5. Pour batter into a greased loaf pan, sprinkle with additional cinnamon.
6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
STORAGE: will keep covered at room temperature for 2-3 days, or in refrigerator for 5-7 days.
