Not All Carbs are Created Equal



I’ve always had a somewhat tumultuous relationship with carbs. We were like a bad relationship: on-again-off-again for several years. I’d cut them out completely, only to feel weak, tired and cranky. Then I’d eat too many and feel sleepy, bloated and just all-around meh 🫤.


I tried going gluten-free for awhile, which didn’t seem to do anything other than make me stop enjoying food (especially going out to eat!).


Then I met sourdough. And it changed everything…

Sourdough bread begins with a starter that contains both yeast and bacteria. As the starter ferments, more and more healthy bacteria colonize the dough until it’s essentially a probiotic-rich food. Hooray GUT HEALTH.


And it doesn’t stop there. Unlike most carbohydrates, which cause a spike in blood sugar, studies have shown that sourdough bread is associated with improved glucose balance - in other words, eating it doesn’t create a spike in blood sugar.

How Sourdough Changed My Relationship with Carbs

After I ate most breads, I felt sluggish and bloated, but not sourdough. I could eat an entire loaf (although I don't recommend it) and feel just fine. I have found that when I pair it with a protein like cottage cheese or eggs it's great for my energy levels and my digestion.


Why Sourdough is Healthier Than Other Bread

Sourdough bread begins with a starter that contains both yeast and a bacterium called Lactobacillus. As the starter ferments, more healthy bacteria colonize the dough until it’s essentially a probiotic-rich food - yay gut health! This is what gives the bread that tangy flavor- wild yeast has more flavor than commercial yeast, and is natural in the sense that it doesn’t contain any additives.


In fact, studies have shown that consuming sourdough bread has a beneficial effect on the gut microbiome. Experts also suggest that the prebiotics and probiotics in sourdough help degrade the gluten - making it easier to digest for those sensitive to the gluten protein.


As you can see, there are more reasons than one to opt for sourdough bread over your favorite rye, honey wheat, or brioche. I learned a lot about healthy living after becoming a health coach, but consistently choosing sourdough is the one thing I’m doing differently on a regular basis - I can't get enough!




And so far, my gut and body thank me!
