Sourdough Chocolate Chip Muffins

Happy Friday friends! It is time for another sourdough recipe and this one is a new family favorite - even for my picky 5-year old. These Sourdough Chocolate Chip Muffins are seriously so delicious! You'll have a hard time eating just one. The flavors of these muffins are the perfect combo of sweet + sourdough tang.




Our house is often full of a lot of different sourdough recipes, and it was only a matter of time before I was going to find the perfect muffin recipe. I originally made these late on a Wednesday night after a long day at work and I just felt like baking - baking is my therapy. I also ran out of time to go grocery shopping so I wanted to make sure I had something for us all to enjoy the following morning for breakfast.


Does anybody else feel like this is often when their favorite recipes come to life?


Oh, and I forgot to mention how simple they are to make! Just gather your ingredients and make sure you have about 1 cup of sourdough starter (or discard) available. These would be perfect for Christmas morning.




SOURDOUGH CHOCOLATE CHIP MUFFINS

(Adjusted from Twelve on Main)


INGREDIENTS:


  • 1/2 cup melted butter

  • 2 large eggs, room temp

  • 1 cup sourdough discard (or starter)

  • 1/2 cup sugar

  • 1 tsp vanilla

  • 1.5 cup all purpose flour

  • 1/2 cup milk of choice

  • 1/2 tsp baking powder

  • 1 tsp baking soda

  • pinch sea salt

  • 1.5-2 cup mini chocolate chips


INSTRUCTIONS:


  1. Preheat the oven to 350 F.

  2. Add wet ingredients - your melted butter, eggs, sugar, vanilla, milk and sourdough discard to a large bowl and stir it well until combined.

  3. Add dry ingredients - the flour, chocolate chips, salt, baking powder and baking soda. use a wooden spoon to mix the flour mixture in. Do not overmix. Mix until just combined.

  4. Spray your muffin tin with non stick spray, or use muffin liners.

  5. Fill the muffin tins about 2/3 to 3/4 full.

  6. Bake in the oven for 15-20 minutes or until the tops begin to turn golden brown.

  7. Take them out of the oven and let them cool before removing.

  8. Enjoy!

  9. Store any leftovers (if there are any!) in an airtight container, or freeze them in a ziplock bag for later!
