Sourdough Thumbprint Cookies

Valentine's Day is this week and I wanted to add something fun to the menu - something besides chocolate and candy hearts (does anybody actually still buy those anymore?). YUCK.




I had fun experimenting and tried a Double Chocolate Loaf, Chocolate Cupcakes (they didn't turn out unfortunately), and a Valentine's Loaf that was purple (from sweet potato powder) with milk chocolate chips (this also didn't turn out...). But when I asked everyone on my Instagram Page what they wanted to see, almost everyone asked for cookies.


So I got creative! I wanted something simple and sweet, and something besides chocolate.


These Sourdough Thumbprint Cookies are soft, buttery and the perfect treat for you and your Valentine. They are also smaller than regular cookies, so you don't feel as guilty if you indulge in a few (or five!).


This recipe is so simple! And it's a great way to use up some of your sourdough starter (or discard) if you have extra on hand.


I passed some out to my neighbors so they could be my taste testers and everyone gave two thumbs up! One even said they were the best thing I've made yet!




SOURDOUGH THUMBPRINT COOKIES

Original Recipe: Farmhouse on the Boone


INGREDIENTS:

Cookie dough

  • 1/2 cup (1 stick) unsalted butter, room temperature

  • 3/4 cup white sugar

  • 1/4 cup sourdough discard

  • 1 large egg

  • 1 teaspoon vanilla

  • 2 1/4 cups all purpose flour

  • 1/2 teaspoon baking soda

  • pinch of salt

For rolling

  • 1/4-1/2 white sugar, for rolling

Filling:

  • 1/3 cup or more strawberry jam, or whatever flavor you prefer


INSTRUCTIONS:

  1. In the bowl of a stand mixer, add softened butter and sugar. Cream them together for a few minutes.

  2. Add your sourdough starter (or discard), egg, and vanilla extract. Mix until combined.

  3. In a separate medium bowl, combine the flour, baking soda and a pinch of salt.

  4. Slowly add the dry ingredients to the wet ingredients and mix until just incorporated.

  5. Roll into a disk and either wrap in plastic wrap or place in a bowl with a lid.

  6. Place in the refrigerator for at least 30 minutes.

  7. Preheat the oven to 375F.

  8. Prepare a baking sheet with parchment paper.

  9. Place 1/4-1/2 cup white sugar in a small bowl.

  10. Using a spoon or tablespoon, scoop the dough into small balls, about 1 tablespoon (30 grams) in size.

  11. Roll in the palms of your hands until a smooth ball forms.

  12. Roll the cookie dough balls in the bowl of sugar and place on the prepared baking sheet.

  13. Using a small spoon, create a well in the center of the dough ball by pressing gently.

  14. Add about a teaspoon of jam to the center of each cookie.

  15. Place in the preheated oven and bake for 10-12 minutes or until the cookies start to brown around the edges. Transfer to a cooling rack.

  16. Lightly dust with powdered sugar.


NOTES: If you want a longer fermentation, place dough in the fridge for 1-3 days prior to baking.
